Ingredients
One per line
In one bowl, mix these ingredients together- 1 cup Libby's canned pumpkin 1 cup white sugar 1/2 cup vegetable oil 1 egg 1 teaspoon vanilla In another bowl, sift or stir together- 2 cups white flour 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 & 1/2 teaspoons cinnamon, or pumpkin pie spices

Preheat oven to 350. Gradually stir the dry stuff into the wet stuff about half at a time. When it's all together, mix well- for a minute or so. Then stir in one cup of chocolate chips- or white You can also add a few nuts, if you like. Take 2 spoons, and drop onto lightly greased (or Pam sprayed) cookie sheet- in about heaping Tablespoon sized mounds. Bake for 10 to 12 minutes, until they seem sort of firm like cupcakes, but not too toasty on the bottom. Let cool on the cookie sheet for a few minutes. Then transfer to cooling rack or plate to finish cooling. The cook needs to "sample" these several times throughout the cooking and cooling process!
