1 cup rice cooked in 2 cups water 2 T butter Juice form 1 large lime or two smaller ones 1 can crushed pineapple drained 3/4 cup fresh cilantro chopped Salt and pepper to taste
Directions
One per line
Cook rice. As soon as it's done, toss in the butter and stir to melt. Add lime juice, pineapple and cilantro. Stir to combine. Serve immediately as the lime juice really gets soaked up by the rice. If you aren't ready to eat when the rice is done, just toss in the butter and keep a lid on to keep warm. Just before serving, add the rest of the ingredients.
