4 c chicken broth 2 boneless, skinless chicken breasts or thighs 1 tsp olive oil 1 c chopped onion 1 c chunky salsa 1/2 tsp minced garlic 1/2 tsp ground cumin 1 c corn 1/2 tsp chili powder 1 T lime juice 1 T taco seasoning 1 (14 oz) can Itallian tomatoes 1 (14 oz) can black beans

Cook chicken in 4 c chicken broth over medium heat covered for 1 hour. If you don't have the time, just use pre-cooked chicken and add it. It's really good with chicken thighs, it's more tender, but also good with chicken breasts. Add olive oil, onion, salsa, garlic, cumin, corn, chili powder, lime juice. Let it simmer in pot over medium heat for a few minutes. Just before serving, add taco seasoning, tomatoes, and rinsed black beans. Serve with crushed tortilla chips, shredded cheese, guacamole, fresh cilantro, sour cream, and fresh tomatoes. Serves 6-8. Note: if using slow cooker, put all ingredients in crock pot, cook on low 6-8 hours, or on high 3-4 hours.
