2.5 lb. boneless pork butt 1/2 cup sugar 1/3 cup vinegar 1/2 cup soy sauce 1 1/2 cup water (or more) 3 buds garlic, minced (or substitute minced garlic) 1 1/2 inches ginger root- peel off skin, and finely grate (or substitute 1.5 T chopped ginger in a jar) cooked rice

Cut off fat from pork, brown in frying pan in chunks. Stir together sugar, vinegar, soy sauce, water, garlic, ginger root. Add seasoning mix to pork, cook covered until tender, about 1 hour. Make day before serving, refrigerate and remove hardened fat before heating it to serve. Serve over steamed rice. Serves 5-6 people. When I make it for a larger group, I buy 10 lb. of pork, and it's usually enough with some left over. If boneless butt is not available, use bone-in. Then cook the bones with the meat, and the rest of the meat will slip off easily, and throw away the bones! This freezes really well, freeze in freezer zip lock with the juices to keep the meat tender. Another way to cook this, is in the crock pot. First brown the sides of the slab of meat. put meat in crock pot along with all other ingredients. Cook 4 hours on high or 8 hours on low. Shred meat, and serve over rice.
