2 medium onions, chopped 2 T olive oil, divided 3 or 4 tomatoes, chopped 2 6" to 8" zucchini, chopped 2 6" to 8" yellow summer squash, chopped 1/2 t. black pepper 1 t. salt 2 T fresh thyme (1 T dry leaf thyme or about 1 t. powd. thyme) 1/2 c. grated Parmesan cheese

Saute onions in large frying pan with 1 T olive oil over medium heat until limp and beginning to brown (about 12-15 mins). While onions are cooking, chop tomatoes and put in bottom of sprayed, shallow 9 X 13" baking pan. Put zucchini over top of tomatoes, Put yellow squash over top of zucchini, and sprinkle with thyme. Layer cooked onions over yellow squash. Drizzle with remaining olive oil, add pepper and salt,and top with cheese. Cover with foil and bake at 350 for 1 hr or until cheese is melted and vegetables are tender. I often sprinkle a little more salt throughout as I'm layering.
