1 c skim milk 1 c heavy cream 2 c sugar 1/2 c lemon juice or juice of 2 lemons 1 c coconut 1 c crushed pineapple
Directions

mix all ingredients together except the coconut and pineapple. Pour into ice cream maker. Mix about 1 hour or until thickened. Add coconut and pineapple. Freeze immediately, and for best results freeze several hours before serving, so it hardens. Makes about 1 quart. If you don't have heavy cream, you can substitute milk, it won't be as creamy. You can substitute any fruit, just make sure to use the same amount of fruit.
