I use this recipe for Strawberry, Raspberry, Peach or combination of fruits freezer jam. 3 1/4 cups mashed fruit 1/4 cup lemon juice 1 package MCP pectin (I will only use MCP not Surejell) 1 cup corn syrup 4 1/2 cups sugar

Clean and cut up your fruit. Mash (I like to use a potato masher but many people use a food processor. I found you get air in the fruit using a processor but it will work.) Measure 3 1/4 cups and put in a large bowl. Add the lemon juice and stir. Slowly add a package of MCP pectin. Stir continually until it is well mixed in. Let sit for 30 minutes stirring every 5 minutes. Add 1 cup corn syrup Slowly add 4 1/2 cups of sugar mixing well. Make sure your sugar is really mixed in and dissolved. Pour into containers that are freezer safe. Let sit on your counter for 24 hours undisturbed before putting in the freezer. Makes approximately 7 cups of jam.
