1 lb boneless chicken 2 tbsp oil 1/2 onion 1/2 green bell pepper 1/2 tsp ginger - 1 can pineapple chunks-drained, but keep juice 2 tbsp soy sauce 1 tbsp cornstarch
Directions

Stir fry chicken in oil until almost cooked. Add in onion and green bell pepper. Stir in pineapple. Mix juice, soy sauce and corn starch and add to stir fry, stirring until thickened. Add in ginger. Serve over rice.
