4 eggs 1 ? c sugar 1 c canola oil 1 can (15 oz) pumpkin 2 c flour 2 tsp cinnamon 2 tsp baking powder 1 tsp baking soda 1 tsp salt frosting ingredients: 1 (8 oz) package cream cheese, softened ¼ c butter, softened 1 tsp vanilla about ½ of a 2 lb bag powdered sugar

In a bowl, beat eggs, sugar, oil, and pumpkin. Combine flour, cinnamon, baking powder, baking soda, and salt, and gradually add to pumpkin mixture. Lightly coat a large cookie sheet with cooking spray, and pour mixture in. Bake 350 for 25-30 min. Cool before frosting. For frosting: beat ingredients together until smooth. This recipe makes delicious cupcakes. Makes 23 cupcakes. Bake 18-22 minutes. Tip: for cupcakes, use largest cookie scoop for each cupcake. Add just a tiny bit (around a teaspoon) extra to each, and they won't overflow.
