Myrna's Rolls Edit Tags: Breads
Directions:

Heat the following in a bowl in your microwave for 3 ½ min

2 c. milk (I use 2%) or 1% would work. Not skim.

1 stick butter or margarine

You want this hot but not boiling. Butter should be soft.

Then add ½ c. sugar and 2 t. salt. Whisk together and set aside to cool. Works best to use a real whisk.

In another small bowl dissolve and stir together-

2 pkg. yeast (or 2 T)

2 t sugar
-
-
½ c. warm water
-

let yeast mixture rise 4-5 min

Note- do not use whole wheat flour. It doesn't work well.

In a mixer or Kitchen Aid mix (works best with the whisk attachment) the milk mixture with 3 c. flour until smooth. Add the yeast mixture and 2 eggs and beat well. Then add 2 more cups of flour. Mix well again. At this point, I switch over to my dough hook (or you can knead by hand) and add 2 ½ c. more flour. I knead this for 8 minutes, gradually adding flour as needed (about 1 c. more). Make sure to do it for the full 8 minutes. When the dough comes away from sides of bowl, it is ready. If dough is sticking to sides it's not ready and needs more flour. Careful to not add too much flour.

I then take the dough out of the bowl, spray the sides of the bowl and top of the dough with spray vegetable oil, put the dough back in the bowl, and cover with plastic wrap loosely. Let rise about 90 minutes (sometimes less) until doubled in size. Dough is then ready to pan.

I use this dough for rolls, cinnamon rolls and breadsticks, but for rolls, I divide the dough in half, and roll out each half into a circle ¼" thick. Then I spread softened butter (not liquid butter or it will not work) on top (you can also add grated cheddar cheese, garlic salt, and parmesaen.. Then I cut out triangles like spokes from the center of a wheel, roll these up fairly loosely, and put on a greased cookie sheet. Cover loosely with plastic wrap sprayed with pam, let rise 1 ½ hrs. Bake at 350° for 15 minutes. Brush with melted butter, while still warm.

If you make the cheese rolls, it takes longer to cook.

Makes 2 big cookie sheets full.

When you cut dough in half, and roll it out, it should make 16 rolls. Total for recipe is 32.

Cool rolls on rack before putting in bags and before freezing.
