Ingredients:
  • 1 lb. boneless, skinless chicken breasts, cubed
  • 2 tsp bottled minced garlic
  • 1 (20 oz) can unsweetened pineapple chunks or crushed pineapple, including juice
  • ¼ C soy sauce
  • 3 oz tomato paste
  • â…“ C sugar
  • 4 C thawed frozen stir-fry vegetables
  • 4 C cooked rice
Directions:
  1. Lightly spray a large saucepan with cooking spray.
  2. Cook chicken and garlic over medium-high heat until browned, 5 minutes.
  3. Add pineapple, soy sauce, tomato paste, and sugar; mix well to combine.
  4. Add stir-fry vegetables; mix well.
  5. Cook until vegetables are heated through.
  6. Serve over cooked rice.
  7. Notes:
  8. This recipe is very fast and easy, no chopping.
  9. I got this recipe from my on-line low fat cooking class.
  10. We really liked the flavor of this recipe!
  11. Serves 4.
