Ingredients:
  • 5 T butter
  • ½ C chopped onion
  • 2 ½ tsp curry
  • â…“ C flour
  • 1 ½ tsp sugar
  • 1 ¼ tsp salt
  • ¼ tsp ginger
  • 1 C milk
  • 1 C chicken broth
  • 1 ½ lb. chicken, cooked and chopped
  • 1 tsp lemon juice
Directions:
  1. Saute onion in curry powder and butter for 5 minutes.
  2. Stir in salt, flour, sugar, and ginger until blended.
  3. Gradually stir in milk and chicken broth, and cook.
  4. Stir constantly until thick.
  5. Add meat and lemon juice.
  6. Serve over rice.
  7. Notes:
  8. Serves 4-6
  9. Add toppings such as coconut, nuts, craisins, green onions, pineapple
