Congo Carrot Cake

Directions:
Preheat oven to 350º
4 eggs- Beat until light and lemon colored
Add 2 cups sugar
1 cup oil
Sift 2 cups flour
3 t cinnamon
2 t soda
1 t salt
Mix then add
3 cups grated carrots
1 cup chopped pecans or walnuts
1 20 oz can drained crushed pineapple
¾ cup raisin
Mix. Cook in 9x13 pan for 50-58 minutes or two 9" rounds for 40-45 minutes
Frost with the cream cheese frosting below.
2 packages 8 oz cream cheese softened
½ cup butter softened
2-4 cups powdered sugar (depending how thick you like your frosting.)
1 t vanilla
