Directions:
  1. Preheat oven to 350º
  2. 4 eggs- Beat until light and lemon colored
  3. Add 2 cups sugar
  4. 1 cup oil
  5. Sift 2 cups flour
  6. 3 t cinnamon
  7. 2 t soda
  8. 1 t salt
  9. Mix then add
  10. 3 cups grated carrots
  11. 1 cup chopped pecans or walnuts
  12. 1 20 oz can drained crushed pineapple
  13. ¾ cup raisin
  14. Mix. Cook in 9x13 pan for 50-58 minutes or two 9" rounds for 40-45 minutes
  15. Frost with the cream cheese frosting below.
  16. 2 packages 8 oz cream cheese softened
  17. ½ cup butter softened
  18. 2-4 cups powdered sugar (depending how thick you like your frosting.)
  19. 1 t vanilla
