Ingredients:
  • 2 T butter melted
  • 2 T Dijon mustard
  • 1 clove garlic
  • ¼ cup fine bread crumbs (or crushed cheese it crackers)
  • 2 T Parmesan cheese
  • 2 T Minced parsley
  • 4 boneless, skinless chicken breasts
Directions:
  1. Mix melted butter, mustard and garlic in a wide shallow bowl.
  2. In another bowl, mix bread crumbs, Parmesan cheese and parsley.
  3. Dip chicken in butter mixture and then coat the skinned side of the chicken in the bread crumb mixture. Place on a shallow rimmed baking sheet.
  4. Bake uncovered for 15 minutes in a 500° oven. They might take 16-17 minutes if very thick but no more than that.
  5. If cut into bite sized pieces, bake 400° for 20 minutes.
