Ingredients:
  • 1 ¼ sticks butter (melted)
  • 1 ¾ C flour
  • 1 T baking powder
  • 1 ¼ tsp cinnamon
  • â…› tsp salt
  • 1 tsp vanilla
  • â…” C sugar
  • â…” C milk
  • 1 egg
  • 1 ¼ C fruit (blueberries, peaches, raspberries, strawberries, etc.)
  • 5 T melted butter
  • â…” C flour
  • â…” C powdered sugar
  • ¼ tsp cinnamon
Directions:
  1. Combine flour, baking powder, cinnamon, and salt in a large bowl, whisk to combine.
  2. In a medium bowl, combine 1 ¼ sticks melted butter, vanilla, ⅔ C sugar, milk, and egg, whisk to combine.
  3. Fold butter mixture and fruit into flour mixture, use no more than 10 strokes.
  4. Spoon batter into each greased muffin cup, about ¾ full.
  5. Combine 5 T melted butter, ⅔ C flour, ⅔ C powdered sugar, and ¼ tsp cinnamon to make the Struesel topping.
  6. Press 2 T struesel on top of each.
  7. Bake 400
  8. Bake until tops are golden 15-17 minutes.
  9. Let cool in pan, serve and enjoy.
