Beef and Brown Sugar Enchilladas Edit    Tags: Main Dishes

Ingredients:
  • 1 ½ lb. lean ground beef
  • 1 (16 oz.) can black re-fried beans
  • 1 (19 oz.) can red enchilada sauce, divided
  • â…“ cup brown sugar-- or to taste
  • ½ tsp. onion powder
  • 2 cups grated cheddar cheese, divided
  • 10-12 flour tortillas (or corn tortillas)
Directions:
  1. Brown ground beef in a large pan, drain off fat.
  2. Add refried beans, ½ of the enchilada sauce, brown sugar & onion powder. Mix well & bring to a simmer, remove from heat.
  3. Fill one tortilla with about ¼ of a cup of filling & 2 Tbsp. cheese.
  4. Roll up & place in a 9x13 pan.
  5. Repeat process until pan is full.
  6. Pour remaining enchilada sauce over prepared enchiladas, sprinkle with remaining cheese.
  7. Bake at 350° for 30 minutes.
  8. Serve with sour cream, chopped tomatoes, sliced olives, diced onions, shredded lettuce, avocado or guacamole.
  9. I like this recipe because it only uses about 2 pans.
  10. This took me 30 minutes to assemble, so it's pretty quick!
  11. I used corn tortillas and really liked the flavor.
