Ingredients:- 1 T vegetable oil
- 2 medium onions, chopped (1 cup)
- 2 cloves garlic, finely chopped
- 3 c chicken broth
- 2 T chopped fresh cilantro or ½ tsp ground coriander
- 2 T lime juice
- 1 tsp ground cumin
- ½ tsp dried oregano leaves
- ¼ tsp red pepper sauce
- ¼ tsp salt
- 1 can (11 oz) whole kernel corn, drained
- 1 can (15 oz) great northern beans, drained
- 1 can (15 oz) butter beans, drained
- 2 c chopped cooked chicken breasts (canned chicken works great)
Directions:

Heat oil in 4 quart pot over medium heat.

Cook onions and garlic in oil, stirring until onions are tender.

Stir in remaining ingredients, except chicken, heat to boiling, reduce heat.

Simmer uncovered for 20 minutes.

Stir in chicken, simmer until hot.

This is low-fat and really yummy, especially served with shredded cheese, crushed tortilla chips, chopped green onions, diced tomatoes, chopped fresh cilantro, and sour cream.

Serves 6.

Preparation time is 30 minutes, cook time 25 minutes.
