Ingredients:
  • 2 lbs. small new red potatoes
  • ½ cup sliced green onions
  • 1 cup coarsely chopped cucumber
  • Pesto dressing ingredients
  • ½ cup olive oil
  • ¼ cup white wine vinegar
  • 1 clove garlic crushed
  • 2 Tablespoons chopped fresh basil or 2 teaspoons dried leaf basil
  • ¼ cup Parmesan cheese
Directions:
  1. Place large saucepan of salted water over high heat.
  2. Cut unpeeled potatoes into 2 inch cubes and drop in water
  3. Partially cover and bring to boil
  4. Reduce heat and simmer 10 minutes ur until tender
  5. While potatoes are cooking make pesto dressing
  6. Combine all dressing ingredients in a blender.
  7. Mix. Set aside until ready to use. Remix before putting on salad.
  8. Place cooked potatoes in a colander.
  9. Run cold water over cooked potatoes to cool.
  10. Drain well
  11. In a large bowl, combine cooked potatoes, green onions, and cucumber
  12. Toss with Pesto dressing
