Ingredients:
  • 1 lb. cubed, boned, skinned chicken
  • 2 T canola or vegetable oil
  • 2 T lemon juice
  • 1 tsp garlic powder
  • 1 tsp seasoned salt
  • ½ tsp ground oregano
  • ½ tsp pepper
  • 1 C green, red, yellow or orange pepper cut in strips
  • 1 C thin onion wedges
  • 1 C tomato wedges
  • ½ C mild chunky salsa
  • 8 hot flour tortillas warmed in microwave (we like the raw kind at Costco that you cook)
Directions:
  1. Combine first 7 ingredients.
  2. Cover and refrigerate 6 to 8 hours to marinate (I don't marinate for very long and it still tastes great).
  3. In big skillet, heat 2 T oil over high heat, saute chicken until it loses its redness.
  4. Add peppers, onions, and continue cooking until crisp and tender.
  5. Add tomato and salsa, simmer, tossing chicken and veggies 1 minute longer.
  6. Serve immediately with additional salsa.
  7. Makes 4 servings.
  8. Can serve with shredded cheese, guacamole, or re-fried beans.
