Ingredients:- 1 lb. cubed, boned, skinned chicken
- 2 T canola or vegetable oil
- 2 T lemon juice
- 1 tsp garlic powder
- 1 tsp seasoned salt
- ½ tsp ground oregano
- ½ tsp pepper
- 1 C green, red, yellow or orange pepper cut in strips
- 1 C thin onion wedges
- 1 C tomato wedges
- ½ C mild chunky salsa
- 8 hot flour tortillas warmed in microwave (we like the raw kind at Costco that you cook)
Directions:

Combine first 7 ingredients.

Cover and refrigerate 6 to 8 hours to marinate (I don't marinate for very long and it still tastes great).

In big skillet, heat 2 T oil over high heat, saute chicken until it loses its redness.

Add peppers, onions, and continue cooking until crisp and tender.

Add tomato and salsa, simmer, tossing chicken and veggies 1 minute longer.

Serve immediately with additional salsa.

Makes 4 servings.

Can serve with shredded cheese, guacamole, or re-fried beans.
