Garlic pesto Chicken Soup Edit    Tags: Soups

Ingredients:
  • 2 T butter
  • ½ cup diced onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 cans chicken broth
  • 2 cups cooked chicken cut in strips
  • 2 garlic pesto tortillas
Directions:
  1. Saute vegetables in butter for about five minutes.
  2. Add chicken broth and bring to boil.
  3. Add chicken.
  4. Simmer for 5 minutes.
  5. While simmering, cut tortillas into "noodle strips".
  6. Add tortilla strips to soup.
  7. Remove from heat.
  8. Let sit for a few minutes for the tortilla strips to soak into the broth.
  9. Stir and serve.
  10. Just a note.
  11. This really doesn't need any other seasonings if you use the garlic pesto tortillas! They add amazing flavor!
