Ingredients:- 1 cup butter, softened (do not melt all the way, cookies will be better if butter is just soft)
- 1 cup sugar
- ¾ cup packed brown sugar
- 2 tsp vanilla extract
- ½ tsp salt
- 2 eggs
- 2 cups flour
- ½ cup cocoa
- 1 tsp baking soda
- 1 â…” cups (10 oz package) mint or chocolate chips
Directions:
-
Heat oven to 375°.
-
Beat butter, white and brown sugar, vanilla and salt in large bowl until creamy. Add eggs; beat well.
-
Stir together flour, cocoa and baking soda; gradually add to butter mixture, beating until well blended.
-
Add chocolate chips.
-
Drop by rounded teaspoons (or tablespoons) onto ungreased cookie sheet.
-
Bake 8-10 minutes or until set.
-
They really don't need to be cooked longer even if they are much bigger
-
Cool slightly; remove from cookie sheet to wire rack.
-
Cool completely.
-
Note: If you made the cookie dough ahead of time and if it was in the fridge, take it out, push the softened button on microwave, soften for 2 minutes or so, this makes the cookie dough the right consistency. (it will be too hard if you try to scoop straight from fridge)
