Ingredients:- 1 lb. cooked chicken (about 2 c chopped)
- 1 c celery, chopped
- â…“ c chopped green onions
- zest of 1 medium orange (about 1 T)
- ½ c Craisins
- ½ c mayonnaise
- 1 tsp coarse grain mustard (dijon would probably work also)
- 2 T your favorite jam or jelly (I used orange mango but any kind will work)
- ½ tsp salt
- ¼ tsp black pepper
- ½ c chopped pecans, toasted (optional)
- croissants, rolls, or pita pockets
- lettuce leaves
Directions:

In a medium bowl, combine chicken, celery, green onions, orange zest, and craisins.

In a separate bowl, whisk together mayonnaise, mustard, jelly, salt, and pepper.

Add to the chicken mixture and toss to combine.

Just before serving, add the pecans if you have them.

Serve on a croissant, roll, or pita pocket with a crisp leaf of lettuce.

I used croissants and they were delicious!
