Ingredients:
  • 2 cups firm ripe strawberries, crushed
  • 4 cups sugar
  • 1.75 oz pkg Sure Jell Premium Fruit Pectin
Directions:
  1. Wash and rinse plastic containers with tight fitting lids.
  2. Crush rinsed strawberries with potato masher, or pulse in blender, but do leave small chunks.
  3. Measure 2 cups crushed strawberries, and 4 cups sugar, and mix together in large mixing bowl.
  4. Let stand 10 minutes, stirring occasionally.
  5. Stir 1 box pectin and ¾ cup water in small sauce pan.
  6. Bring to boil on high heat, stirring constantly.
  7. Boil 1 minute, stirring constantly, remove from heat.
  8. Stir pectin mixture into fruit mixture.
  9. Stir constantly until sugar is completely dissolved, about 3 minutes.
  10. Pour into prepared containers, leaving ½ inch space at top for expansion during freezing, cover.
  11. Let stand at room temperature for 24 hours until set.
  12. Refrigerate up to 3 weeks, otherwise, store in freezer for up to 1 year.
  13. Serve with Granny Sycamore white bread and peanut butter, serve with pancakes, or as a topping for ice cream, or as another delicious topping of your choice!
