Ingredients:
  • 3 cups cooked quinoa (2 cups water, 1 cup quinoa)
  • 1 red bell pepper
  • 1 mango diced (I have used 1 ½ cups frozen mango chopped fine)
  • 1 can black beans rinsed and drained
  • 6 green onions chopped
  • ½ bunch cilantro chopped (about ½ cup chopped)
  • dressing
  • 1 tsp salt
  • ½ tsp pepper
  • juice of 2 limes
  • ¼ cup + 2 T red wine vinegar
  • ½ cup olive oil
Directions:
  1. Let the cooked quinoa sit uncovered at room temperature to cool.
  2. Mix all the other ingredients except the dressing ingredients with the quinoa.
  3. Shake the dressing ingredients in a container or small tupperware.
  4. Pour dressing over the salad and mix well.
