Emily's Mango Quinoa Salad Edit Tags: Lunch/Snacks, Salads, Side Dishes, Vegetable Dishes

Ingredients:- 3 cups cooked quinoa (2 cups water, 1 cup quinoa)
- 1 red bell pepper
- 1 mango diced (I have used 1 ½ cups frozen mango chopped fine)
- 1 can black beans rinsed and drained
- 6 green onions chopped
- ½ bunch cilantro chopped (about ½ cup chopped)
- dressing
- 1 tsp salt
- ½ tsp pepper
- juice of 2 limes
- ¼ cup + 2 T red wine vinegar
- ½ cup olive oil
Directions:

Let the cooked quinoa sit uncovered at room temperature to cool.

Mix all the other ingredients except the dressing ingredients with the quinoa.

Shake the dressing ingredients in a container or small tupperware.

Pour dressing over the salad and mix well.
