Ingredients:
  • 1 cup shortening
  • 1 cup brown sugar
  • 1 cup white sugar
  • 3 eggs
  • 1 20 oz can crushed pineapple drained (save juice for frosting)
  • 1 teaspoon vanilla
  • 4 cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
Directions:
  1. Cream shortening and sugars.
  2. Add eggs and mix well.
  3. Mix in drained pineapple and vanilla.
  4. Add flour, baking powder and baking soda.
  5. Mix well.
  6. Drop by spoonfuls onto greased cookie sheet.
  7. Cook at 375° for 7 to 10 minutes depending on size.
  8. Cool on cookie racks.
  9. When cool, frost with pineapple icing.
  11. Pineapple Icing
  12. 3 cups powdered sugar
  13. 2-3 Tablespoons reserved pineapple juice (more if needed)
  14. ¼ cup softened butter or shortening
  15. 1 teaspoon vanilla
  16. Mix well and spread on cookies.
