Ingredients:
  • ½ C canola oil (sometimes I use ¼ C applesauce, and ¼ C oil)
  • â…” C honey
  • â…“ C molasses (if you don't have it, substitute honey)
  • 2 egg whites or 1 egg
  • 3 medium bananas, mashed
  • 2 apples, peeled, cored and diced (or 1 C applesauce)
  • 2 tsp vanilla
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp ginger
  • ½ tsp cloves
  • 1 tsp baking powder
  • 1tsp baking soda
  • ½ C bran (grape nuts work)
  • 1 C oats
  • 2 C whole wheat flour
  • 1 tsp salt
Directions:
  1. Pre-heat oven to 350.
  2. Mix in order, fill cupcakes â…” C full.
  3. Bake 18-20 minutes.
  4. Makes about 21 muffins.
  5. For the fruit, you can substitute berries, plums, canned pumpkin, grated zucchini, etc.
  6. You just need a total of about 4 cups of fruit or vegetables.
  7. Use whatever fruit you have!
  8. For mini muffins, use larger cookie scoop, put in greased muffin tins, bake for 14 minutes or until muffins are a little bit firm to the touch.
  9. For muffin bites, use smaller cookie scoop, put in greased muffin tins, bake 14 minutes.
