Ingredients:- ¾ c oil
- 1 c sugar
- 2 eggs
- 1 c finely grated carrots
- ½ c crushed pineapple or mandarin oranges
- ½ c chopped nuts
- 1 ¼ c flour
- ½ tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- ½ tsp cinnamon
- cream cheese icing: 8 oz package cream cheese, softened
- ½ c butter or margarine
- 2 c powdered sugar
- 1 tsp vanilla
- or butter cream icing: 1 ½ c powdered sugar
- ¼ c margarine
- 2 T milk
- ½ tsp vanilla
Directions:

Preheat oven to 350.

Blend oil with sugar.

Add eggs and carrots, beat well.

Add pineapple and nuts, blend.

Add sifted dry ingredients, blend.

Pour into a square, greased pan.

Double recipe for a 9x13 pan.

Bake 40 minutes, or until toothpick in center comes out clean.

Cool before frosting.

For cream cheese icing: mix ingredients together, add more powdered sugar for added thickness if necessary.

For butter cream icing: mix ingredients together, add more powdered sugar for added thickness if desired.
