Ingredients:- 1.5 c oil
- 2 c sugar
- 4 eggs
- 2 c finely grated carrots
- 1 c crushed pineapple or mandarin oranges
- 1 c chopped nuts
- 2.5 c flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- ½ tsp cinnamon
- cream cheese icing: 16 oz package cream cheese, softened
- 1 c butter or margarine
- 4 c powdered sugar
- 2 tsp vanilla
- or butter cream icing: 3 c powdered sugar
- ½ c margarine
- 4 T milk
- 1 tsp vanilla
Directions:

Preheat oven to 350.

Blend oil with sugar.

Add eggs and carrots, beat well.

Add pineapple and nuts, blend.

Add sifted dry ingredients, blend.

Pour into a square, greased pan.

Grease a 9x13 pan.

Bake 40 minutes, or until toothpick in center comes out clean.

Cool before frosting.

For cream cheese icing: mix ingredients together, add more powdered sugar for added thickness if necessary.

For butter cream icing: mix ingredients together, add more powdered sugar for added thickness if desired.
