Ingredients:
  • 12 eggs
  • 1 ½ c milk
  • 1 lb. sausage
  • 1 bell pepper (any color), chopped or 1 small can chopped mushrooms
  • 1 yellow onion, chopped
  • 3 green onions, chopped
  • 5 small tomatoes, chopped
  • seasoning salt
  • salt and pepper
  • 2 c Cheddar cheese
Directions:
  1. Preheat oven to 350.
  2. Brown sausage, onion, bell pepper in pan, and sprinkle generously with seasoning salt while cooking.
  3. Cook until sausage is cooked through, drain any fat if necessary.
  4. Beat eggs in a large bowl, until eggs are frothy.
  5. Add milk, sausage mixture, green onions, tomatoes, 1 ½ c cheddar cheese, and sprinkle with salt and pepper.
  6. Mix well, and pour into a greased 9x13 pan.
  7. Bake for 45minutes, or until top is lightly browned.
  8. Take out of oven, and sprinkle with ½ cup cheese.
