Chicken Curry with Cashew Edit Tags: Main Dishes, Poultry

Ingredients:- ¼ C butter
- 2 C onions, finely chopped
- 1 T ginger, peeled and chopped (or ½ tsp powdered ginger)
- 3 T curry powder
- 2 tsp salt
- 1 tsp cumin
- ¼ tsp cayenne pepper (or less)
- 1 to 1 ½ lbs. chicken breasts, cut into chunks
- 1 (14.5 oz) can diced tomatoes
- ¼ C chopped fresh cilantro
- ¾ C cashews
- ¾ C plain yogurt
Directions:

Heat butter in large skillet until melted.

Cook onions, garlic and ginger for about 5 min.

Add curry powder, salt, cumin, and cayenne and cook for another 2 min, stirring constantly.

Add chicken and stir until chicken is well coated.

Add tomatoes, including juice and cilantro.

Bring to a simmer, stirring constantly.

Just before serving, chop cashews finely, add to curry along with yogurt.

Simmer uncovered for another 5 min.

Serve over rice.
