Chicken Curry with Cashew Edit    Tags: Main Dishes, Poultry

Ingredients:
  • ¼ C butter
  • 2 C onions, finely chopped
  • 1 T ginger, peeled and chopped (or ½ tsp powdered ginger)
  • 3 T curry powder
  • 2 tsp salt
  • 1 tsp cumin
  • ¼ tsp cayenne pepper (or less)
  • 1 to 1 ½ lbs. chicken breasts, cut into chunks
  • 1 (14.5 oz) can diced tomatoes
  • ¼ C chopped fresh cilantro
  • ¾ C cashews
  • ¾ C plain yogurt
Directions:
  1. Heat butter in large skillet until melted.
  2. Cook onions, garlic and ginger for about 5 min.
  3. Add curry powder, salt, cumin, and cayenne and cook for another 2 min, stirring constantly.
  4. Add chicken and stir until chicken is well coated.
  5. Add tomatoes, including juice and cilantro.
  6. Bring to a simmer, stirring constantly.
  7. Just before serving, chop cashews finely, add to curry along with yogurt.
  8. Simmer uncovered for another 5 min.
  9. Serve over rice.
