Ingredients:
  • 1 C Rice
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • ½ tsp Chili powder
  • 1 cl garlic, chopped
  • 1 C corn
  • 1 C kidney beans, drained
  • 3 tomatoes, chopped
  • taco shells
  • Monterey Jack cheese, grated
Directions:
  1. Cook rice.
  2. Heat olive oil in large skillet and cook onion, carrot, chili powder, and garlic about 5 minutes.
  3. Add corn, kidney beans and tomatoes and cook 5 minutes.
  4. Add rice and mix well.
  5. Spoon mixture into taco shells and sprinkle cheese on to serve.
