Mexican Bean Rice in Tacos Edit Tags: Main Dishes
Ingredients:- 1 C Rice
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- ½ tsp Chili powder
- 1 cl garlic, chopped
- 1 C corn
- 1 C kidney beans, drained
- 3 tomatoes, chopped
- taco shells
- Monterey Jack cheese, grated
Directions:

Cook rice.

Heat olive oil in large skillet and cook onion, carrot, chili powder, and garlic about 5 minutes.

Add corn, kidney beans and tomatoes and cook 5 minutes.

Add rice and mix well.

Spoon mixture into taco shells and sprinkle cheese on to serve.
