Ingredients:
  • For cookies:
  • 1 cup butter softened
  • ⅓ cup cream
  • 2 cups flour
  • granulated sugar for dipping uncooked cookies
  • For Icing:
  • ¼ cup butter softened
  • 2 cups powdered sugar
  • 1-2 T orange juice
Directions:
  1. Mix butter, cream and flour.
  2. Chill for about 30 minutes.
  3. Preheat oven to 375°
  4. Sprinkle flour on the surface you will be rolling the dough on.
  5. Roll out cookie dough VERY thin.
  6. Cut out using a circular cutter the size you like. (I've used anything from a small round cookie cutter to a lid from a small jar or medicine bottle. Just depends on the size you like. I would keep them small as the cookies are very delicate and can break easily.)
  7. Dip each cookie on both sides in granulated sugar.
  8. Place on ungreased cooked sheet.
  9. Prick each cookie three times with a fork.
  10. Bake for 7-9 minutes.
  11. Remove to a cooling rack.
  12. Make Icing using the butter, powdered sugar and orange juice.
  13. Whip together.
  14. Make sandwich cookies by frosting one cookie and putting another on top to have a sandwich cookie.
