Ingredients:
  • ½ c butter
  • 1 c sugar
  • 1 egg
  • 1 c shredded zucchini
  • 1 t lemon zest
  • 2 c flour
  • 1 t soda
  • 1 t baking powder
  • 1 t cinnamon
  • ½ t salt
  • ½ c raisins
  • 1 lemon (save juice for glaze)
  • Glaze
  • 2 cups powdered sugar
  • Juice from one lemon
  • ¼ c softened butter
Directions:
  1. Cream butter and sugar.
  2. Add egg, zucchini and lemon zest.
  3. Stir in sifted flour, soda, baking powder, cinnamon and salt.
  4. Mix well and add raisins.
  6. Bake 375, 8 minutes.
  7. Cool.
  8. Glaze with lemon frosting.
  10. Mix 2 cups powdered sugar with juice from one lemon.
  11. Add ¼ cup butter softened.
  12. Mix well and frost the cookies.
