Ingredients:
  • 12 large eggs
  • ¼ onion, chopped fine
  • ¼ green bell pepper, chopped fine
  • 1 tsp salt
  • ¼ tsp pepper
  • 8 slices cooked bacon, chopped
  • cheddar cheese, shredded
  • optional toppings: sun dried tomatoes, basil, spinach, mushrooms, Italian seasoning
Directions:
  1. Preheat oven to 350.
  2. cook bacon, and leave a little grease in pan, remove bacon.
  3. saute onion, bell pepper in bacon grease.
  4. in a bowl whisk together eggs, then add salt, pepper, bacon.
  5. fill each muffin cup with egg mixture about â…” full.
  6. Makes between 12-18.
  7. Bake 15-20 minutes.
