Ingredients:
4 ½ cups warm water
2 ¼ Tablespoons yeast
12 Tablespoons butter, divided
1 Tablespoon salt
3 Tablespoons Brown sugar
11-12 cups flour
For boiling bath:
½ Cup Baking Soda
9 cups water
Directions:
I make this in my Bosch but you can use your Kitchen Aid or make it by hand.
Stir yeast into warm water.
Allow to rest for a couple of minutes.
Melt 3 T butter.
Mix into water and yeast.
Add Salt and brown sugar.
Mix well.
Slowly add flour continuing to add flour until it is no longer sticky.
Knead for about 5 minutes.
Pour into a large greased bowl and cover with plastic wrap.
Let rise for about an hour or until doubled in size.
Punch down and cut dough into three sections.
Cut each section in half and then half again.
Cut those section into thirds and roll into balls.
You should have 36 balls.
Preheat oven to 400°.
Line baking sheets with parchment paper.
Bring water and baking soda to a boil.
Drop 3-4 balls into the boiling water for 20-30 seconds.
Lift out with a slotted spoon draining excess water.
Place on parchment lined baking sheets.
Slit the top of each roll with a sharp knife a couple of times.
Melt remaining butter and lightly brush each roll with the butter.
Sprinkle with coarse sea salt.
Bake for 15-20. minutes until deep golden brown on all sides.
Serve warm!
We tried storing a few leftovers in a ziplock and they turned really soft. The next time we left the few leftovers out in an open basket over night and they were great the next day.
