Crock Pot Santa Fe Chicken Edit    Tags: Crock Pot

Ingredients:
  • 24 oz chicken ( I used a mixture of breasts and thighs but you can use either)
  • 10 oz can diced tomatoes with mild green chilies
  • 15 oz can of black bean refried beans
  • 8 oz frozen corn
  • ¼ c fresh cilantro
  • 1 cup chicken broth
  • 3 green onions chopped
  • 1 t garlic powder
  • 1 T minced or chopped onions
  • 1 t cumin
  • ½ t cayenne pepper
  • salt and pepper to taste
Directions:
  1. Combine all ingredients except chicken and mix well.
  2. Pour half in the crock pot.
  3. Layer chicken on sauce.
  4. Cover with remaining sauce.
  5. Cook on low for 8 hours or high 4-5 hours.
  6. Shred chicken.
  7. Adjust salt to taste
  8. Serve over rice or on tortillas with your favorite toppings.
