White Chocolate & Cranberry Bread Pudding Edit    Tags: Desserts

Ingredients:
  • 12 egg Yolks
  • 1 ½ c sugar
  • 1 quart heavy cream
  • 1 T Vanilla
  • 8 cups bread cubes
  • 2 cups cranberries
  • 2 cups White Chocolate Chips
Directions:
  1. Combine sugar, cream and vanilla in a sauce pan and bring to a light boil.
  2. Turn off heat.
  3. Temper the cream by slowly adding the yolks a little at a time, stirring constantly!
  4. Return to heat and bring to a light simmer, stirring constantly being careful not to boil.
  5. In a large bowl, place the bread pieces and add come of the cream mixture to moisten. Do this a little at a time to avoid over-wetting the bread.
  6. Add cranberries and white chocolate chips and stir to combine.
  7. Place in a 9x13 lightly buttered baking dish.
  8. Bake at 350° until set and golden brown. ( about 20-30 minutes)
  9. Serve warm with the rest of the vanilla cream sauce.
  10. Tastes really good with a scoop of vanilla ice cream too!
