Key Lime Pie Parfait Edit Tags: Desserts

Ingredients:- cheesecake filling
- 1 pkg cream cheese
- 1 can sweetened condensed milk
- 1 tsp vanilla
- â…“ c fresh lemon juice (1 large lemon)
- â…“ c fresh lime juice (2 small limes)
- whipping cream
- 1.5 c heavy whipping cream
- â…” c powdered sugar
- 2 tsp vanilla
- Pinch salt
- graham cracker crust
- 11 graham cracker sheets
- ½ c sugar
- ¼ c plus 2 T butter
Directions:

For crust:
-
crush graham crackers, add melted butter and sugar, mix well.

press down on cookie sheet.

bake 375° for 10-12 min until golden brown.

For Cheesecake filling:
-
mix sweetened condensed milk with room temperature cream cheese.
-
whip very well and make sure there are no lumps.
-
slowly add juices and vanilla.
-
Must make this a day in advance for it to set up and be thicker.

For whipping cream:
-
whip whipping cream, powdered sugar, vanilla and salt.

whip until soft peaks form, make sure it's really thick so it can be firm enough to hold up.

Assembly:
-
get out 8 plastic clear 7 oz cups.

take one large cookie scoop of graham cracker crust, place in bottom and press down.

place one large cookie scoop of cheesecake filling.
-
pipe one single layer of whipping cream over the filling.
-
take one medium sized cookie scoop of graham cracker crust and sprinkle over whipping cream.

place one large cookie scoop of cheesecake filling on top of the crust.
-
pipe one large dollop of whipping cream on top.
-
top with lime zest or graham cracker crumbs.

this makes 8 (7 oz) cups.
