Grandma Mackay's Fruit Salad Edit Tags: Salads
Ingredients:- 1 20 oz can Pineapple Chunks
- Grapes-Red and Green
- Strawberries
- Bananas
- Optional:Fresh peaches or canned mandarin oranges drained, small colored marshmallows

- corn starch
- ¾ cup sugar
- Juice of 1 orange (or ½ inch orange juice concentrate or ½ cup orange juice.
- Juice of 1 lemon (or 3 Tablespoons lemon juice or lemonade concentrate or ½ cup lemonade.)
Directions:

Drain pineapple

Add juice from pineapple to the other juices.

Heat the juices with ¾ C sugar and cook on medium heat.

While it is heating, mix 2 heaping Tbsp cornstarch with ½ C water.

Just before the juices are about to boil, add the cornstarch mixture to the pan stirring constantly.

Stir until it starts to thicken and boil.

Cool 5 min.

Pour glaze over pineapple.

Allow to cool.

Just before eating, add the other fruits and mix.

Note: I will usually make the glaze several hours before we want to eat, even as early as morning and let the glaze and pineapple cool on the counter. I don't add the other fruit until just before eating.
