Ingredients:
  • 1 20 oz can Pineapple Chunks
  • Grapes-Red and Green
  • Strawberries
  • Bananas
  • Optional:Fresh peaches or canned mandarin oranges drained, small colored marshmallows
  • corn starch
  • ¾ cup sugar
  • Juice of 1 orange (or ½ inch orange juice concentrate or ½ cup orange juice.
  • Juice of 1 lemon (or 3 Tablespoons lemon juice or lemonade concentrate or ½ cup lemonade.)
Directions:
  1. Drain pineapple
  2. Add juice from pineapple to the other juices.
  3. Heat the juices with ¾ C sugar and cook on medium heat.
  4. While it is heating, mix 2 heaping Tbsp cornstarch with ½ C water.
  5. Just before the juices are about to boil, add the cornstarch mixture to the pan stirring constantly.
  6. Stir until it starts to thicken and boil.
  7. Cool 5 min.
  8. Pour glaze over pineapple.
  9. Allow to cool.
  10. Just before eating, add the other fruits and mix.
  11. Note: I will usually make the glaze several hours before we want to eat, even as early as morning and let the glaze and pineapple cool on the counter. I don't add the other fruit until just before eating.
