1 lb. boneless, skinless chicken breasts, cubed 2 tsp bottled minced garlic 1 (20 oz) can unsweetened pineapple chunks or crushed pineapple, including juice 1/4 C soy sauce 3 oz tomato paste 1/3 C sugar 4 C thawed frozen stir-fry vegetables 4 C cooked rice

Lightly spray a large saucepan with cooking spray. Cook chicken and garlic over medium-high heat until browned, 5 minutes. Add pineapple, soy sauce, tomato paste, and sugar; mix well to combine. Add stir-fry vegetables; mix well. Cook until vegetables are heated through. Serve over cooked rice. Notes: This recipe is very fast and easy, no chopping. I got this recipe from my on-line low fat cooking class. We really liked the flavor of this recipe! Serves 4.
