1 lb. cubed, boned, skinned chicken 2 T canola or vegetable oil 2 T lemon juice 1 tsp garlic powder 1 tsp seasoned salt 1/2 tsp ground oregano 1/2 tsp pepper 1 C green, red, yellow or orange pepper cut in strips 1 C thin onion wedges 1 C tomato wedges 1/2 C mild chunky salsa 8 hot flour tortillas warmed in microwave (we like the raw kind at Costco that you cook)

Combine first 7 ingredients. Cover and refrigerate 6 to 8 hours to marinate (I don't marinate for very long and it still tastes great). In big skillet, heat 2 T oil over high heat, saute chicken until it loses its redness. Add peppers, onions, and continue cooking until crisp and tender. Add tomato and salsa, simmer, tossing chicken and veggies 1 minute longer. Serve immediately with additional salsa. Makes 4 servings. Can serve with shredded cheese, guacamole, or re-fried beans.
