6 C boiled potatoes in small cubes or 1 large package of frozen hash brown potatoes 1/2 finely chopped onion 1/2-3/4 C finely chopped green pepper (optional) 14 eggs beaten 1-1 1/2 C ham in small cubes

In a large covered, non-stick fry pan cook the ham, onion, and green pepper on medium low heat until the onion is translucent. Add the potato and if hash browns are used thaw first. Heat until uniformly hot. Add beaten eggs and cook covered on medium low heat until eggs are firm. From start to finish, this will take about 45 min. Loel always made this for our conference morning breakfast, it is so tasty! We often dip in ketchup or salsa.
