3 cans Chicken (I use the Costco Kirkland kind. Or you can cook a chicken and bone it. Or cook some chicken breasts and cut them up.) 1 can cream of chicken soup 1 can cream of celery soup 1 14 oz. Can diced tomatoes 1/2 small can diced chilies 4 T quick-cooking Tapioca 3 T minced onion 10-12 Burrito-size flour tortillas 4 cups shredded cheese
Directions

Mix chicken, soup, tomatoes, chilies, tapioca, and onion. Tear tortillas into bit-size pieces. Line the bottom of crock pot with torn tortillas. Add 1/3 of chicken mixture. Sprinkle with cheese. Repeat layers. Cook on low for 6-8 hours. (High- 3 hours) Notes: Fast and easy to make in the Crock Pot. It is delicious!
