3 cups cooked quinoa (2 cups water, 1 cup quinoa) 1 red bell pepper 1 mango diced (I have used 1 1/2 cups frozen mango chopped fine) 1 can black beans rinsed and drained 6 green onions chopped 1/2 bunch cilantro chopped (about 1/2 cup chopped) dressing 1 tsp salt 1/2 tsp pepper juice of 2 limes 1/4 cup + 2 T red wine vinegar 1/2 cup olive oil

Let the cooked quinoa sit uncovered at room temperature to cool. Mix all the other ingredients except the dressing ingredients with the quinoa. Shake the dressing ingredients in a container or small tupperware. Pour dressing over the salad and mix well.
