1/2 C canola oil (sometimes I use 1/4 C applesauce, and 1/4 C oil) 2/3 C honey 1/3 C molasses (if you don't have it, substitute honey) 2 egg whites or 1 egg 3 medium bananas, mashed 2 apples, peeled, cored and diced (or 1 C applesauce) 2 tsp vanilla 2 tsp cinnamon 1 tsp nutmeg 1 tsp ginger 1/2 tsp cloves 1 tsp baking powder 1tsp baking soda 1/2 C bran (grape nuts work) 1 C oats 2 C whole wheat flour 1 tsp salt

Pre-heat oven to 350. Mix in order, fill cupcakes 2/3 C full. Bake 18-20 minutes. Makes about 21 muffins. For the fruit, you can substitute berries, plums, canned pumpkin, grated zucchini, etc. You just need a total of about 4 cups of fruit or vegetables. Use whatever fruit you have! For mini muffins, use larger cookie scoop, put in greased muffin tins, bake for 14 minutes or until muffins are a little bit firm to the touch. For muffin bites, use smaller cookie scoop, put in greased muffin tins, bake 14 minutes.
