3/4 c oil 1 c sugar 2 eggs 1 c finely grated carrots 1/2 c crushed pineapple or mandarin oranges 1/2 c chopped nuts 1 1/4 c flour 1/2 tsp baking soda 1/2 tsp baking powder 1/4 tsp salt 1/2 tsp cinnamon cream cheese icing: 8 oz package cream cheese, softened 1/2 c butter or margarine 2 c powdered sugar 1 tsp vanilla or butter cream icing: 1 1/2 c powdered sugar 1/4 c margarine 2 T milk 1/2 tsp vanilla

Preheat oven to 350. Blend oil with sugar. Add eggs and carrots, beat well. Add pineapple and nuts, blend. Add sifted dry ingredients, blend. Pour into a square, greased pan. Double recipe for a 9x13 pan. Bake 40 minutes, or until toothpick in center comes out clean. Cool before frosting. For cream cheese icing: mix ingredients together, add more powdered sugar for added thickness if necessary. For butter cream icing: mix ingredients together, add more powdered sugar for added thickness if desired.
