4 lbs red skinned potatoes 4 cloves fresh garlic with each one sliced into 3 pieces. 1/4 cup butter softened 1 cup sour cream 1/2 to 1 cup milk or cream (to taste) 4 oz cream cheese softened 2 cups grated cheese 2 green onions thinly sliced 10 slices bacon cooked and chopped or 1/2 cup bacon bits salt & pepper to taste Toppings 1 green onion sliced 2 slices bacon crumbled 1/2 cheddar cheese

Preheat oven to 375°. Wash postatoes Peel off 2/3 of the skin. Cut into chunks and cook covered with water along with the garlic. Boil for about 15 minutes or until tender. Drain potatoes & garlic. Mash potatoes & garlic. Add remeaining ingredients except the toppings. Mash to desired consistency. Place in 9x13 casserole dish. Add toppings. Bake for 25-30 minutes or until cheese is melted and potatoes are hot.
