1 3/4 C flour 1 3/4 tsp baking powder 1/8 tsp salt 1/8 tsp ground nutmeg 1 1/2 C milk 2 large eggs, separated 1/2 tsp vanilla 1/4 C unsalted butter, melted 1 large egg white 1/4 C sugar

Preheat waffle iron to medium-high. In large bowl, whisk together flour, egg yolks, vanilla, and 1/4 C melted butter. Whisk the milk mixture into the flour mixture until a batter is formed. Take care not to over mix the batter. In medium bowl, whip 3 egg whites until they begin to hold a loose peak. Scatter sugar over the whites and continue beating until they hold a soft peak. Fold a third of the egg whites into the batter to lighten the base. Fold in remaining whites. Cook in waffle iron. Notes: This recipe is a little work, but I really liked the taste. Jonny thought it was good, but I think he likes bisquick just as much!
