For cake: 1 3/4 cups sugar 3 eggs 1 1/2 cups vegetable oil 1 Tablespoon vanilla 1/3 cup orange juice 3 cups apples, peeled and chopped (I like Granny Smith) 1 cup shredded coconut 1 cup chopped pecans 3 cups flour 1 teaspoon baking soda 1/2 teaspoon salt 1 Tablespoon ground cinnamon 1/4 teaspoon nutmeg For Sauce: 1/2 cup butter 1 cup sugar 1/2 cup buttermilk 1/2 teaspoon baking soda

Preheat oven to 325° Generously grease a bundt or angel food cake pan Beat together the sugar, eggs, oil and vanilla Mix in orange juice, chopped apples,coconut, and chopped pecans Add flour, baking soda, salt, cinnamon, and nutmeg and mix well Pour into pan Bake for 1 hour and 15 minutes Just before cake is done, make sauce Melt butter in large sauce pan (mixture will foam up as it starts to boil) Stir in sugar, buttermilk and baking soda Bring to a soft boil and then stir constantly for 1 minute Pour sauce over the hot cake still in the pan as soon as it's removed from the oven Let stand one hour Turn cake out upside down onto a rack and then right side up onto a plate Serve all by it's gooey self or with whipped cream or ice cream
