1 C Rice 2 tbsp olive oil 1 onion, chopped 2 carrots, chopped 1/2 tsp Chili powder 1 cl garlic, chopped 1 C corn 1 C kidney beans, drained 3 tomatoes, chopped taco shells Monterey Jack cheese, grated
Directions
One per line
Cook rice. Heat olive oil in large skillet and cook onion, carrot, chili powder, and garlic about 5 minutes. Add corn, kidney beans and tomatoes and cook 5 minutes. Add rice and mix well. Spoon mixture into taco shells and sprinkle cheese on to serve.
