1 1/2 lbs ground beef 2/3 cup cracker crumbs 1/2 cup chopped onion 2/3 cup evaporate milk 1 t salt 1/3 cup flour 3 T shortening For Sauce 1 can 13 1/2 oz pineapple chunks (I think I've used the 20 oz can alot because we love pineapple! I've just increased the measurements below to 3 T cornstarch,3/4 cup vinegar,3/4 cup brown sugar, 3 T soy sauce, 3 T lemon juice) 2 T cornstarch 1/2 cup vinegar 1/2 brown sugar 2 T soy sauce 2 T lemon juice 1 cup chopped green pepper

Combine the first 5 ingredients and mix lightly but thoroughly. Shape meat mixture into approx. 30 balls. Roll in flour Brown meat balls in shortening until cooked. Drain off any fat. While the meatballs are cooking, make the sweet and sour sauce by draining the pineapple chunks and reserving the liquid. Measure the juice and add water to make 1 cup if not enough juice. (1 1/2 cups if using 20 oz can of pineapple) Blend juice and cornstarch together until smooth. Stir in vinegar, brown sugar, soy sauce and lemon juice. Cook until the sauce thickens and is clear. Add pineapple chunks and green peppers. Pour over meatballs. Let simmer about 10 minutes. Serve over rice.
